½ cup black beans
Salsa to taste
2 cups spinach
Optional: chopped cooked sweet potato, sauteed veggies, crumbled tofu
Stuff spinach into the bottom of a microwave-safe bowl. Top with beans and a bunch of your favorite salsa.
Cover loosely and microwave for 2 minutes.
Drain excess liquid, then stir and top with avocado.
I eat this when I’m dying to have a hot breakfast. I usually feel peppier if I start my day with fruit or a smoothie, but sometimes I just need something hearty.
Feel free to add any other veggies you’d like--just make sure that you've cooked them beforehand if you don’t want them to be raw.
For a truly decadent breakfast, I add some crumbled tofu and extra salsa and stuff into a whole grain tortilla.
