Ah, work-from-home days: coffee on the couch and a real, hot breakfast. I'm trying to limit grains and flours in my diet, so today's concoction is grain-free and supremely satisfying. It also came together in about five minutes thanks to good old Trader Joe's-style convenience. Enjoy!
Sweet Potato Hash with Cauliflower Rice
1/2 package Trader Joe's Cooked Sweet Potato Chunks (or dice half a sweet potato and roast in a 400-degree oven until tender)
1/2 can black beans
1 package (5 oz or so) of your favorite greens (spinach and baby kale work great)
Seasonings to taste - I used dashes of salt, garlic, and chipotle powder
1 cup cauliflower rice - I used TJ's bagged cauliflower rice, but you can make your own*)
Toppings: salsa, avocado, drizzle of tahini dressing
1. Throw sweet potatoes, black beans, and greens into a pan over medium heat. If needed, add water or cooking spray in small amounts to prevent sticking--this might depend on the water content of your greens. Toss occasionally to encourage the greens to wilt. Add seasonings, tasting as you go. This part is done when the sweet potatoes are hot and the greens are wilted (about 5 minutes).
2. While the sweet potato mixture is cooking, heat a small pan over medium-high heat and coat with cooking spray (optional). Once hot, add the cauliflower rice to the pan and toast for 3-5 minutes while stirring frequently--enough to get just a touch of browning. Sprinkle with a touch of salt and pepper.
3. Prep your toppings--chop the avocado, make the dressing, etc.
4. Layer your bowl!
* To make your own cauliflower rice, remove the core of a head of cauliflower, then use either a box grater or the shredder attachment of a food processor to turn the cauliflower florets into rice-size pellets. That's it! It's not exactly like rice, of course, but it really hits the spot.
