Greens ‘n’ Beans
1 cup cooked rice or quinoa (or other grain)
3 cups greens (I like baby kale for this)
½ cup garbanzo beans
¼ cup tahini dressing (see Tahini-Garbanzo Salad for recipe)
Cook your grains - shortcut this step by buying microwaveable pre-cooked rice or quinoa.
Wilt your greens. When in the morning rush, I stuff them into a glass container and microwave for about a minute.
Drain your beans and rinse.
Mix your dressing.
If taking to-go: Toss everything but the dressing into a glass container. Keep the dressing separate. At lunchtime, warm the grains/greens/beans gently and toss with the cold dressing.
If eating right away, just mix it all in a big bowl and dig in!
You can replace the garbanzo beans with black beans and replace the dressing with salsa and avocado, and it’s just as delicious.
Use this combo going forward: Grain + Green + Bean + Sauce. You can’t go wrong!
