Greens ‘n’ Beans

  • 1 cup cooked rice or quinoa (or other grain)

  • 3 cups greens (I like baby kale for this)

  • ½ cup garbanzo beans

  • ¼ cup tahini dressing (see Tahini-Garbanzo Salad for recipe)

  1. Cook your grains - shortcut this step by buying microwaveable pre-cooked rice or quinoa.

  2. Wilt your greens.  When in the morning rush, I stuff them into a glass container and microwave for about a minute.

  3. Drain your beans and rinse.

  4. Mix your dressing.

  5. If taking to-go: Toss everything but the dressing into a glass container.  Keep the dressing separate.  At lunchtime, warm the grains/greens/beans gently and toss with the cold dressing.

  6. If eating right away, just mix it all in a big bowl and dig in!

Notes:

You can replace the garbanzo beans with black beans and replace the dressing with salsa and avocado, and it’s just as delicious.

Use this combo going forward: Grain + Green + Bean + Sauce.  You can’t go wrong!
