4 cups of greens (see note)
½ or 1 whole can garbanzo beans, drained and rinsed
2 Tbsp tahini (see note)
2 Tbsp apple cider vinegar
spices (see note)
water to thin
For lunch on-the-go: Pack greens and garbanzos in a big plastic bag, along with a paper towel (discourages wilting). Add the beans to this bag as well.
Mix dressing ingredients in a small jar or even a plastic baggie.
Toss everything together in a big bowl and eat!
If you don’t like greens yet (yet!), I suggest starting with baby lettuces. Most grocery stores have packaged baby lettuces, usually called baby romaine or spring mix.
Tahini is available in virtually every grocery store nowadays. Try the peanut butter aisle or the Asian foods aisle.
Spices I like in this are always salt and garlic powder, and I rotate smoked paprika with thyme or just black pepper.
